Woke up early, didn’t bother taking a nap. Loving this fall weather. It’s just been a really lovely day. I think my absolutely favorite part of this day was watching Bitty as we waited for her sissy’s dance class. She was trying her best to read me a book. Then a little later she kept trying to get other kiddos to come sit with us to look at the book too. She kept patting the floor next to her. Then when they would walk over she would sit in my lap and then pat my other leg trying to get them sit in my lap too. She is a riot! Surprise lunch & the book fair

Our day started around six and the hubster and I are just finally getting ready for bed after eleven. It’s been a day full of our usual routines, yet we still managed to squeeze a few extra things in. Buggie & I went to surprise Bunny for lunch and then went to the book fair. We scooped up some fun new reads for my three lil ladies. Buggie was especially excited to find two books that her preschool teacher has read to her class. Among them we scored a new llama llama book to add to our collection and a new Bob Marley book! Got Budah’s glasses replaced after a skateboard face plant accident. Did it really take him seven months to break them? Buggie got another hair cut. We finally came to a good compromise after she begged me to let her shave her’s like her daddy’s. God I love this little free spirit of mine. Bunny got to go have some girl time and did some shopping with Maw-Maw before a friend came over for the evening. We got the girl’s fundraisers from their dance class in and passed all of the orders out in our neighborhood. After we finally got all of our monsters to bed and watched one of our fave shows, I can finally climb into our bed with fresh sheets & blanket. I am one exhausted mama. 20131023-225548.jpg

Take a break

Another early start. Getting my fam off to school and work. A fun morning with my lil Bitty while we waited for Buggie to get home from preschool. A day full of cleaning, laundry, playing taxi, playing with my monsters and lots and lots of giggles were had this evening. Our girls were so excited that I am finally able to play “airplanes & super heros” with them again and fly them around and be silly with them. Being a stay at home mom is by far the hardest job I have ever had, but no doubt my most rewarding one. I count my blessings daily. While some days may be so stinking chaotic that I anxiously look forward to being able to go to bed, I will forever be thankful for the life we live. The faithful husband I wake up to, the four healthy monsters I am so blessed to have call me mama, rad parents, loving family, and the best of friends. I mean really, what more could I possibly ask for? I am one lucky gal. Days get so busy it’s easy to get caught up in the whirlwind. Remember to take a break! Crock pot freezer meal recipes

With crazy busy days full of chasing a toddler all day, pre-k, getting a 3rd grader to and from school, home schooling a teenager, tap & ballet classes, cheerleading practice, football games, choir practice, playing taxi for my teen, a house full of neighborhood kids, God children, or nieces, cleaning, laundry galore, errands, appointments, really who has time to think about a healthy meal every night? I’m tired just thinking about the daily chaos we live. It’s so easy to hit a drive through or order pizza on those days…which becomes every day! And well, that’s not happening! I recently had to have two surgeries back to back that pretty much landed me in bed for almost a month and threw my work load on my husband and my mom. So In between the two surgeries after the first being completely unexpected I decided to make a bunch of freezer meals that all they had to do was pull them out and toss them in the crock pot or oven. My mom later asked “why don’t we do this all the time? That was so helpful!” Don’t tell my mom I agree with her:) So yesterday I made a trip to costco and our local grocery store to make groceries. Then last night me, my husband, and my mom threw them together in no time flat. My mom sliced veggies, hubster cooked the ground turkey, and sautéed for me, while I filled & labeled ziplocks. In less than two hours we had two weeks worth of dinner prepped. Now our freezer is full of meals that will be a piece of cake to make after our crazy busy days! Freeing up my evenings for bonding time with my lil monsters! I’ve had many friends ask me about it and to share some recipes. Took me long enough, but here they are! I’ll also be prepping our smoothies today that will just need to be tossed in the blender with a little almond milk and viola a healthy smoothie without having to deal with the mess every day. I’ll share those too!

Please keep in mind you can easily change these recipes up and make them as quick as you’d like with canned goods or as unprocessed as you’d like. Which is the direction I am slowly going in. But don’t worry there are can goods & jars in these recipes! In the recipes with chicken I must admit I have a huge phobia of touching raw meat. Something about it really grosses me out. So I buy a huge 10 lb bag of boneless skinless frozen chicken breast from costco. Easier for me to deal with;) I brown all of the ground turkey in huge batches and split them up between the recipes. I also like to buy chopped onions and bell pepper in the freezer department so I don’t have to cry while cutting the onions, not to mention it saves on this busy mama’s prepping time. In the long run it’s a price saver to buy in bulk and prepping it in advance, bonus!

So here we go…

Zesty Italian chicken
Ingredients:
1 lb boneless skinless chicken
Packet of zesty Italian dressing
2 cups chicken broth
Onion (about the amount of 1 small)
Bell pepper (about the amount of 1)
Spinach (2 cups)
Pasta or rice
Seasoning of your choice, my fave go too’s are: garlic powder, “no salt”, emeril’s essence, and creole seasoning.

After I write the date, name of meal, and cooking directions I add all ingredients, except the pasta or rice, into a gallon freezer zip lock bag. Then you can either thaw out the meal in the fridge the night before or even toss it in the crock pot frozen if you forget the night before. Cook on high 3-4 hours or low 6-7 hours. Cook pasta or rice and serve it over it.

Pulled pork sandwiches
Ingredients:
Pack of boneless pork chops
Onions (about the amount of 1 small)
Garlic powder
Bottle of fave BBQ sauce (or your fave homemade)
Buns

Clean pork chops (or in my case, have my husband do it), label gallon freezer bag with date, pulled pork, and cooking directions. Then toss all ingredients in the bag. Crock pot on low 6-7 hours or high 3-4 hours. Shred with two forks and serve. If you’re like me and prep about two weeks of meals at a time I also freeze the buns. Date the bag, the meal it goes with, and will write 1 of 2 and 2 of 2 on them so I can remember what they are for. Yes, I’m that forgetful;)

Chicken fajitas
Ingredients:
1 lb boneless skinless chicken
Packet of fajita seasoning
Sliced onions
Sliced bell pepper
1 cup chicken broth (optional)
Additional seasoning of your choice
Tortillas or spinach (see below)

Label two separate ziplocks, one for the tortillas to serve the chicken fajitas in or spinach to serve it over and then all other ingredients in the other. Crockpot on low 6-7 hours or high 3-4 hours. Chicken may appear a bit charred, but this is normal. Shred chicken with forks and serve in tortillas or like I enjoy over spinach. Of course you can always add salsa, cheese, sour cream, avocado, etc etc

Veggie & tortellini soup
Ingredients:
2 cups kale
Bag of frozen green beans
Bag of frozen corn
Bag of frozen carrots (or fresh baby carrots)
Onions (the amount of 1)
Bell pepper (the amount of 1)
Large can of petite diced tomatoes (with juice)
1 cup Fresh sliced mushrooms
2 cups chicken broth
Seasoning of your choice
Pack of cheese filled tortellini

Label two gallon zip locks, put tortellini in one. Then remaining ingredients in the other. I find it easier to deal with if you save liquids and diced tomatoes to add last. It will be a very full bag. You can split it between two bags if you’d like. It’s all going to go in the same crock pot after all. Toss in the crock pot for 5-6 hours on low or high for 3 hours. You can add to tortellini to the crock pot for the last 45 minutes to an hour. Or cook according to directions.

BBQ chicken sandwiches
Ingredients:
1 lb boneless skinless chicken breast
Bottle of BBQ sauce
Onion
Seasoning of your choice
Buns or rolls

Same bit! Label bags and toss all ingredients in one and rolls in the other. 6-7 hours on low or 3-4 hours on high.

Spaghetti
Ingredients:
1 lb browned lean ground turkey
Large pasta sauce (or homemade)
Large can petite diced tomatoes (with juice)
1 cup fresh sliced mushrooms
Onion
Bell pepper
Seasoning of choice
Pasta
Spinach (optional)
6 boiled & peeled eggs (optional)

Toss all ingredients (except pasta and spinach) in a labeled ziplock bag. Again I suggest you save the spaghetti sauce and diced tomatoes for last. Can also split this one between two bags. Crock pot for 6-7 hours on low or 3-4 on high. Cook pasta and serve. It’s also good to serve it over fresh spinach, or both pasta and fresh spinach. Also, we love ours with boiled and peeled eggs. Toss them in the crock pot with the sauce and it will soak up the flavor.

Teriyaki chicken & rice
Ingredients:
1 lb boneless skinless chicken
1 can pineapple chunks (with juice)
Bottle of teriyaki marinade/sauce
2 cups of fresh baby carrots
Rice of your choice

Toss all ingredients (except rice) in labelled ziplock. Crockpot low 6-7 hours or high 3-4 hours. Cook rice and serve over it.

Creole Chicken & rice
Ingredients:
1 lb boneless skinless chicken
2 large cans petite diced tomatoes (with juice)
Onion
Bell pepper
2 cups chicken broth
Rice
Seasoning: garlic powder, “no salt”, creole seasoning (as much as you’d like), and any other seasoning you’d like.

Same spill, toss everything except rice in labeled gallon freezer ziplock. Save liquids for last. Crock pot on low 6-7 hours or high 3-4 hours. Cook rice and serve over it. And of course “Laissez le bon temps rouler”!

Chili
Ingredients:
2 lbs browned lean ground turkey
2 large cans petite diced tomatoes
2 packets of chili seasoning
Egg noodles (optional)
Sour cream (optional)
Shredded cheese (optional)

All ingredients (except egg noodles) in the gallon labelled ziplock. Crock pot on high 6-7 hours or low 3-4 hours. Optional: serve over egg noodles with sour cream & cheese

Rosemary pork & rice
Ingredients:
Pack of boneless pork chops
Rosemary
Italian seasoning packet
3 veggie bouillon cubes
1 cup water
Rice
Seasoning of choice
Veggie of choice (as a side dish)

Fill that labeled gallon ziplock with all of the above (except rice & veggie of choice). Crockpot 6-7 hours on low or 3-4 hours on high. Serve over rice with a veggie on the side.

Turkey cheese steak stuffed bell pepper
Ingredients:
5 bell peppers
10 slices of provolone cheese
Fresh Mushrooms
Onion
1 lb sliced turkey (I cut it in strips)
2 tbsp olive oil
Seasoning of choice

Slice top off of bell peppers and clean out the inside. Sauté turkey, mushrooms, onions, and seasoning of choice in the olive oil. Place one piece of provolone in the bottom of each bell pepper, stuff with the sautéed turkey & veggies, the top each with another slice of cheese. I used two ziplock bags to lay them in flat. Before placing them in the crock pot add a little olive oil on the bottom. Then place them all in the crock pot up right. Cook on low for 5-6 hours or high for 3-4 hours. You could of course do this with sliced roast beef. But we eat flexitarian so I don’t cook red meat.

Oh! And how could I forget! If you haven’t discovered the reynold’s brand crock pot liners (near ziplocks & foil and such) yet, you’ve got to try them! No scrubbing that crock pot for hours! Just pull the liner out and toss it! I like to line my crockpot at the end of the night for the next use so I don’t slip up and forget to use one! Earlier start

Is it really only a little after ten? It’s been a long day! Up before six to get my little ladies off to school. Then Bitty decided she didn’t want to do her usual sleep in til nine ish bit so that I could climb back in bed for a little nap. So we just got an earlier start. Did some cleaning. Ran a few errands and made groceries with three of my monsters before Bunny was done with choir practice. Had our dishwasher repaired. Cooked dinner. Got my love from work. And then came home and prepped two weeks worth of freezer meals. I’ll try to find the time tomorrow to blog about it for my friends & fam that have been asking about it. Sorry I’m slacking. Monsters to bed. A lil more cleaning. It feels good to be really getting back in the swing of things. I am sore from head to toe, but got a whole lot accomplished. After a nice hot bath I think I just may be ready for bed. 20131021-221158.jpg

Goodbye Odessa

Got up bright and early with the monsters. Checked out of the hotel and headed over to the playground & skatepark for all of them to expel some energy before our drive home. Of course after a group of 16 of us had an early lunch together. Just realized half of the people at lunch came home with me. We opted to have a picnic dinner at the Boerne Skate park & playground to let the monsters enjoy a break before the last stretch of our trip. Met Aryie’s mama to drop her off. Finally home sweet home! As much as we love traveling there is just something always so nostalgic about climbing in you own bed when you finally get home. As usual we have a busy week with several extra things added to this weeks schedule. Beyond ready for some sleep. Were we really only gone two days? It doesn’t quite seem like it. It was so great to get to see my love getting to enjoy a weekend with his old army family! 20131020-213552.jpg

Odessa

It’s been such a special day for my love! We woke up early this morning and loaded six monsters into “Betsy Bleu” for a road trip to Odessa. Budah, Josh, Bunny, Aryie, Buggie, & Bitty handled the five hour drive to west Texas so well! The scenery through the hills just seemed to get bigger and bigger from the hill country on, the big windmills, & all of the oil pumps really seemed to keep their interest. Of course the boys kept us all pretty entertained! When we got here we quickly checked into the hotel, freshened up, and were back out the door. Matt was so thrilled to be able to make it to one of his old Army friend’s surprise retirement/birthday party! Especially since he will be enjoying his retirement in Germany. I ran and dropped the boys off at the Odessa Skate Park for a few hours. The girls had a blast making friends with all of the other children. And Buggie & Bunny seemed to both have a little crush on two brother there. Oh boy are we going to have our hands full with these little ladies one day. Bitty especially enjoyed seeing the pony & long horns. She even kept screaming out “moo” to the cows. After the party the old gang wanted to continue the fun. So I gave my husband the nudge that he needed to get out and have a good time with them while I took all of the monsters back to the hotel for bath & bedtime. I finally got the four lil ladies to sleep. The boys went to hang out in the hot tub for a bit and are now drying their clothes. I of course will wait up for the boys to make it back to the room for the night before I consider sleep. Oh who am I fooling, I doubt I will get sleep until Matt makes it back. I never have slept very well in a strange place, especially without him by my side.20131019-224011.jpg
