Skinny Pumpkin Banana Bread

When fall rolls around I’m on a mission to find new pumpkin recipes for my little Mad. This is our newest addition.

-Skinny Pumpkin Banana Bread-

14.5 oz can organic pumpkin
3 or 4 very ripe bananas
1 box (dry) sugar free yellow cake mix
2 egg whites
1 tsp pumpkin pie spice
1 tsp cinnamon
1 tsp vanilla bean or vanilla extract
1/3 cup unsalted shelled pumpkin seeds

Preheat oven to 350. Spray two bread loaf pans with non stick spray (I used coconut oil).  Mix all ingredients except pumpkin seeds. After mixed well, fold in 1/4 cup of the pumpkin seeds. Poor mixture evenly between the two loaf pans. Sprinkle remaining pumpkin seeds on top. Bake 35-40 minutes until they come out tooth pick clean.

Yields:
2 loaves
16 servings

Mexi Chili

1 lb ground turkey
1 lb turkey breakfast sausage
2 cans kidney beans
2 cans pinto beans
1 can mexi corn
1 can chopped black olives
1 onion
1 bell pepper
2 pkts chili seasoning
2 cups water

Brown meat and combine with remaining ingredients in crock pot on low for 4-6 hours. Garnish with your favorite ingredients.

This is my friend’s mom’s chili recipe. She said she won two chili cook offs with it. So I had to try it. It’s a new family fave.

Crock pot freezer meal recipes

With crazy busy days full of chasing a toddler all day, pre-k, getting a 3rd grader to and from school, home schooling a teenager, tap & ballet classes, cheerleading practice, football games, choir practice, playing taxi for my teen, a house full of neighborhood kids, God children, or nieces, cleaning, laundry galore, errands, appointments, really who has time to think about a healthy meal every night? I’m tired just thinking about the daily chaos we live. It’s so easy to hit a drive through or order pizza on those days…which becomes every day! And well, that’s not happening! I recently had to have two surgeries back to back that pretty much landed me in bed for almost a month and threw my work load on my husband and my mom. So In between the two surgeries after the first being completely unexpected I decided to make a bunch of freezer meals that all they had to do was pull them out and toss them in the crock pot or oven. My mom later asked “why don’t we do this all the time? That was so helpful!” Don’t tell my mom I agree with her:) So yesterday I made a trip to costco and our local grocery store to make groceries. Then last night me, my husband, and my mom threw them together in no time flat. My mom sliced veggies, hubster cooked the ground turkey, and sautéed for me, while I filled & labeled ziplocks. In less than two hours we had two weeks worth of dinner prepped. Now our freezer is full of meals that will be a piece of cake to make after our crazy busy days! Freeing up my evenings for bonding time with my lil monsters! I’ve had many friends ask me about it and to share some recipes. Took me long enough, but here they are! I’ll also be prepping our smoothies today that will just need to be tossed in the blender with a little almond milk and viola a healthy smoothie without having to deal with the mess every day. I’ll share those too!

Please keep in mind you can easily change these recipes up and make them as quick as you’d like with canned goods or as unprocessed as you’d like. Which is the direction I am slowly going in. But don’t worry there are can goods & jars in these recipes! In the recipes with chicken I must admit I have a huge phobia of touching raw meat. Something about it really grosses me out. So I buy a huge 10 lb bag of boneless skinless frozen chicken breast from costco. Easier for me to deal with;) I brown all of the ground turkey in huge batches and split them up between the recipes. I also like to buy chopped onions and bell pepper in the freezer department so I don’t have to cry while cutting the onions, not to mention it saves on this busy mama’s prepping time. In the long run it’s a price saver to buy in bulk and prepping it in advance, bonus!

So here we go…

Zesty Italian chicken
Ingredients:
1 lb boneless skinless chicken
Packet of zesty Italian dressing
2 cups chicken broth
Onion (about the amount of 1 small)
Bell pepper (about the amount of 1)
Spinach (2 cups)
Pasta or rice
Seasoning of your choice, my fave go too’s are: garlic powder, “no salt”, emeril’s essence, and creole seasoning.

After I write the date, name of meal, and cooking directions I add all ingredients, except the pasta or rice, into a gallon freezer zip lock bag. Then you can either thaw out the meal in the fridge the night before or even toss it in the crock pot frozen if you forget the night before. Cook on high 3-4 hours or low 6-7 hours. Cook pasta or rice and serve it over it.

Pulled pork sandwiches
Ingredients:
Pack of boneless pork chops
Onions (about the amount of 1 small)
Garlic powder
Bottle of fave BBQ sauce (or your fave homemade)
Buns

Clean pork chops (or in my case, have my husband do it), label gallon freezer bag with date, pulled pork, and cooking directions. Then toss all ingredients in the bag. Crock pot on low 6-7 hours or high 3-4 hours. Shred with two forks and serve. If you’re like me and prep about two weeks of meals at a time I also freeze the buns. Date the bag, the meal it goes with, and will write 1 of 2 and 2 of 2 on them so I can remember what they are for. Yes, I’m that forgetful;)

Chicken fajitas
Ingredients:
1 lb boneless skinless chicken
Packet of fajita seasoning
Sliced onions
Sliced bell pepper
1 cup chicken broth (optional)
Additional seasoning of your choice
Tortillas or spinach (see below)

Label two separate ziplocks, one for the tortillas to serve the chicken fajitas in or spinach to serve it over and then all other ingredients in the other. Crockpot on low 6-7 hours or high 3-4 hours. Chicken may appear a bit charred, but this is normal. Shred chicken with forks and serve in tortillas or like I enjoy over spinach. Of course you can always add salsa, cheese, sour cream, avocado, etc etc

Veggie & tortellini soup
Ingredients:
2 cups kale
Bag of frozen green beans
Bag of frozen corn
Bag of frozen carrots (or fresh baby carrots)
Onions (the amount of 1)
Bell pepper (the amount of 1)
Large can of petite diced tomatoes (with juice)
1 cup Fresh sliced mushrooms
2 cups chicken broth
Seasoning of your choice
Pack of cheese filled tortellini

Label two gallon zip locks, put tortellini in one. Then remaining ingredients in the other. I find it easier to deal with if you save liquids and diced tomatoes to add last. It will be a very full bag. You can split it between two bags if you’d like. It’s all going to go in the same crock pot after all. Toss in the crock pot for 5-6 hours on low or high for 3 hours. You can add to tortellini to the crock pot for the last 45 minutes to an hour. Or cook according to directions.

BBQ chicken sandwiches
Ingredients:
1 lb boneless skinless chicken breast
Bottle of BBQ sauce
Onion
Seasoning of your choice
Buns or rolls

Same bit! Label bags and toss all ingredients in one and rolls in the other. 6-7 hours on low or 3-4 hours on high.

Spaghetti
Ingredients:
1 lb browned lean ground turkey
Large pasta sauce (or homemade)
Large can petite diced tomatoes (with juice)
1 cup fresh sliced mushrooms
Onion
Bell pepper
Seasoning of choice
Pasta
Spinach (optional)
6 boiled & peeled eggs (optional)

Toss all ingredients (except pasta and spinach) in a labeled ziplock bag. Again I suggest you save the spaghetti sauce and diced tomatoes for last. Can also split this one between two bags. Crock pot for 6-7 hours on low or 3-4 on high. Cook pasta and serve. It’s also good to serve it over fresh spinach, or both pasta and fresh spinach. Also, we love ours with boiled and peeled eggs. Toss them in the crock pot with the sauce and it will soak up the flavor.

Teriyaki chicken & rice
Ingredients:
1 lb boneless skinless chicken
1 can pineapple chunks (with juice)
Bottle of teriyaki marinade/sauce
2 cups of fresh baby carrots
Rice of your choice

Toss all ingredients (except rice) in labelled ziplock. Crockpot low 6-7 hours or high 3-4 hours. Cook rice and serve over it.

Creole Chicken & rice
Ingredients:
1 lb boneless skinless chicken
2 large cans petite diced tomatoes (with juice)
Onion
Bell pepper
2 cups chicken broth
Rice
Seasoning: garlic powder, “no salt”, creole seasoning (as much as you’d like), and any other seasoning you’d like.

Same spill, toss everything except rice in labeled gallon freezer ziplock. Save liquids for last. Crock pot on low 6-7 hours or high 3-4 hours. Cook rice and serve over it. And of course “Laissez le bon temps rouler”!

Chili
Ingredients:
2 lbs browned lean ground turkey
2 large cans petite diced tomatoes
2 packets of chili seasoning
Egg noodles (optional)
Sour cream (optional)
Shredded cheese (optional)

All ingredients (except egg noodles) in the gallon labelled ziplock. Crock pot on high 6-7 hours or low 3-4 hours. Optional: serve over egg noodles with sour cream & cheese

Rosemary pork & rice
Ingredients:
Pack of boneless pork chops
Rosemary
Italian seasoning packet
3 veggie bouillon cubes
1 cup water
Rice
Seasoning of choice
Veggie of choice (as a side dish)

Fill that labeled gallon ziplock with all of the above (except rice & veggie of choice). Crockpot 6-7 hours on low or 3-4 hours on high. Serve over rice with a veggie on the side.

Turkey cheese steak stuffed bell pepper
Ingredients:
5 bell peppers
10 slices of provolone cheese
Fresh Mushrooms
Onion
1 lb sliced turkey (I cut it in strips)
2 tbsp olive oil
Seasoning of choice

Slice top off of bell peppers and clean out the inside. Sauté turkey, mushrooms, onions, and seasoning of choice in the olive oil. Place one piece of provolone in the bottom of each bell pepper, stuff with the sautéed turkey & veggies, the top each with another slice of cheese. I used two ziplock bags to lay them in flat. Before placing them in the crock pot add a little olive oil on the bottom. Then place them all in the crock pot up right. Cook on low for 5-6 hours or high for 3-4 hours. You could of course do this with sliced roast beef. But we eat flexitarian so I don’t cook red meat.

Oh! And how could I forget! If you haven’t discovered the reynold’s brand crock pot liners (near ziplocks & foil and such) yet, you’ve got to try them! No scrubbing that crock pot for hours! Just pull the liner out and toss it! I like to line my crockpot at the end of the night for the next use so I don’t slip up and forget to use one! Chia seeds

Let’s talk chia seeds! I’m sure I am not the only one that instantly flashes back to my childhood when I hear the word “chia”.20131016-104738.jpgDon’t worry, I promise you won’t grow a tree out of your head if you use them! Though I guess it would be nice if it made our hair grow that fast. Chia seed is a fave of our’s around this house. Do you know the benefits they hold?

We’ve been using these magical little seeds in our home for over two years now and love them. Here recently we have experimented a little more with them as to all the different ways they can be used. A few examples:

1. Sprinkled over our breakfast, lunch, or dinner. You don’t even notice a distinct flavor really.

2. Blend them into your smoothies, oatmeal, or whatever you are having for breakfast.

3. Add some to your already beneficial water and watch these little babies expand! It’s also tasty if you add some crystal light. It has an interesting texture. Think bubble tea…only very healthy!

4. Chia pudding! A healthy dessert? There are so many recipes on Pinterest.

The ideas and ways to use chia seed seems almost endless. It is recommended that you try to work about 4 tbsp in your daily diet. But word to the wise start gradually. Maybe 1 tsp at a time. Caramel apple bites

My monsters love candy apples, yet never seem to be able to finish one. So today I made them bite size ones and they loved it!

Ingredients:
Apples
Pretzel sticks
Caramel

Slice apples into wedges and then cut each wedge in half. Pat dry. Carefully insert a pretzel stick into each one. (If you won’t be eating them right away, I would use a tooth pick. Pretzels become soggy after a little while. If serving them to kiddos you can replace the toothpicks with the pretzels before serving) Melt caramel according to package directions. Carefully dip each apple piece into caramel and let excess caramel drip off. You can also dip them into nuts, sprinkles, or candy if your choice. Let cool and serve!

Pasta Salad

I usually make a big batch of it at a time, so this recipe can be divided for smaller batches.

Ingredients:
2 boxes spiral veggie pasta
1 lb block 2% cheddar cheese
1 pack turkey pepperoni
1 can/jar artichoke hearts
1 jar green (and/or black) sliced olives
Italian dressing (I use the packets to make my own with less oil)

Boil pasta, drain, & rinse well. While boiling cut up the cheese, pepperoni, & artichokes. Mix together with pasta, olives, & add amount of dressing desired. (too much will make the pasta soggy). Refrigerate.

I like to fill up mason jars for a quick lunch for my husband to grab on his way to work!

Mashed cauliflower

So if your kiddos are like lil monsters you have to sometimes sneak veggies on them…here’s a super easy way and taste so much like mashed potatoes you may even be able to fool an adult! My kiddos were clueless and to quote my 7 year old monster: “Mommy these are the best mashed potatoes ever!”

I kind of winged it, but it was easier than I thought. I cut up two small/medium cauliflower crowns put it in a microwave safe bowl, added a little water, and covered it with Saran wrap. I steamed it in the microwave until it was fork tender. It took about 10-12 minutes for this process. I drained the excess water and threw the cauliflower in my ninja blender, I added a little 2% milk, melt (organic butter alternative), some “no salt”, and a few tablespoons of the cream cheese (add the milk, butter, salt, & cream cheese to taste). Then blended until it was smooth. It was seriously that easy!

Optional: I have read that some people also add a few potatoes or even instant potatoes to give it more of a potato consistency. I chose to not add the potatoes and I was happy with the cauliflower consistency.

Taco pizza

We have a taco salad or taco soup night pretty often. So I decided to wing it and make a taco pizza. Glad I did, because it was beyond good, and my hubby & lil monsters loved it!

Ingredients:
(all ingredients are what I put on one pizza, can double recipe to meet your family’s needs, guessing on actual measurements since I didn’t really measure any of it, so use more or less by your preference)

– Pizza crust or whole wheat flat bread of your choice
– 1/2 lb ground turkey
– taco seasoning packet
– 1/2 cup black beans, rinsed
– 1/2 cup corn
– 1/4 to 1/2 cup mild salsa
– light ranch
– 1/2 cup cheese (I used mozzarella & medium cheddar)
– sliced tomatoes
– tortilla chips (optional)

Brown ground turkey and prepare according to taco seasoning packet. Spread salsa on pizza crust or flat bread, then drizzle with a little ranch. Crumble the ground turkey over the crust. Then add cheese, black beans, corn, & tomatoes. Bake according to pizza crust or if using flat bread bake at 400 degrees until cheese is completely melted (approximately 10 minutes). Sprinkle with tortilla chips and serve.
